Reflections on good versus great kitchen knives...

When I'm working in the kitchen, I'll often rinse my good knives and put them back on the cutting board w/o drying them, or move back and forth between different knives for different tasks, etc. So the ability to not worry about rust is important to me -- I've one rather old high-carbon chef's knife (it was my grandfather's) and while it takes and keeps a wicked sharp edge, I don't use it for much because it is a pain to take care of. Stainless I can leave wet for half an hour w/o worry, then was, dry, steel the blade and drop it back into the knife block w/o worrying about it.
Ah, well, sloppy habits and all that...
