Most of the pews around the mid west have traditionally been made from the same wood that Stickley favored. The church I grew up in had them limed, our current local church has them stained a medium brown. I wouldn't think that an open pored wood would work.( how's that for alliteration?)

Indeed you are correct but ultimately wrong. You would get choked or get poked with a toothpick of oak. I was not going for alliteration (but nicely alliterated with your "wood would work") but instead simply rhyming. Now lets go over those pertinent keywords again:
