A side note...we decided to make roast beef for Thanksgiving last week. First of all...it was great! But a couple of family members wanted turkey so I roasted a turkey breast. I took it out early, measuring the temp at 5 degrees short of done so that it would complete cooking...just as always. None the less it was so dry that I almost needed my band saw to cut it. But I would never have done that because it would have dulled my blades! On to the question:
