What is the term used when forming a beam from a log?

Just wanted to let you know that I have a lumberjack for a friend. I called him up and asked him these questions. I think we had a a bad connection though. I asked him about the notch in the tree and he said something about "felling sink". If he was feeling sick I didn't want to keep him on the phone for long so I asked in about forming a beam with the log. We actually kinda got sidetracked at that point and I asked him what he has having for dinner and he said "post-and-beam". Since I didn't want to keep him from his pork and beans I moved on the third question about the chisel. This is where the conversation took a turn for the worse. He said "Ze answer (he's French by the way-did I mention that?) is in ze name." Well, knowing I wouldn't get anymore good answers I said, "Sash, old buddie, it's been good talking to you. Say hello to Mrs. Mortise for me. I couldn't get a straight answer one. Good luck with someone else knowing the answers.

Dos estrellas for the 1. felling sink and 3. mortise chisel. I'd also have grudging accepted a bird's mouth for the former too. As to the second question. I'm looking for the term used for the operation/process of making a log into a beam
