Bench up or shut up.

Why did the foreman at my first place of work produce such high quality work ?
He built his own bench. It was perfectly flat, the legs didn't wobble under load and he never let anyone else use it. Ever.
Far to many shop benches are kinda crappy second rate jobs. Hacked together or flogged to death. Leg's bolted instead of tenoned. We've all seen them. 
God knows I had to make do with them.

In the old days every master built his own bench and trestles. It was his privilage and the bosses duty to provide him the time and timber to do it. Rarely did he retire without taking his bench home with him or selling it for a tidy profit when he was near death.
If his son took on his father's trade he would inherit it sometimes along with the business. 
Every bench made by a master was made to measure. His height, his build, his style and type of work. Blocking up Leg's to make do ?
No. Legged benches are inferior to cross frame end types in every respect.
