You didn't give any particulars (for example, are your burls 8" across or 8') so I assume you want some general guidelines.
You might start by asking Sir Google. I typed in "oak burl value" and got this:

This might be useful reading for your research.
Lacking Superman's vision, buying a burl that is not cut to reveal the inside is a huge risk - sometimes the inside is rotted or full of bark inclusions or does not have useful figure.

As already pointed out, interior of burl (and hence value) unknown until opened up, but value can be drastically reduced if cut poorly. I'd suggest you find turning groups in your area and take the burls to a meeting.
