You'll get a lot of opinions on this. I always go low tech. I just put it in a carboard box with the lid closed. If I have turned several bowls I'll put several of them in there. The key is restricting air movement. I open the box every few days or so if I think about it to release some of the moisture. I weigh the bowls and write this information somewhere. If it's a roughed out bowl I write it on the waste area near the bottom with a magic marker. When it's lost a fair amount of weight I take it out of the box and put it up on the shelf. When it stops losing weight it's done. Takes about 3 to 6 months depending on the thickness and size. I usually don't keep track because I have a dozen other projects going and it is usually longer than that before I get back to them.

If it's a thin bowl with sides and bottom that are even and doesn't have any bad areas like knots or pith I just put it up on the shelf. It will dry in a few days.
