>Nothing's toxic once it's dry and cured ('cept lead paint). ANY finish you put on will fail. Russ will tell you to use nothing. I advocate using shellac which can be repaired with a bit more shellac. Others prefer a non-drying oil like mineral oil with a little wax (parafin) mixed in (applied hot) that's easy to renew as well.
