The 80 gives a fair edge but the edge has some "bite", kinda like a steak knife. I can get an edge sharper on my Tormek but many times it doesn't cut as well. Just my little opinion.

>Jack, the Norton SG wheels marketed by Craft Supplies is the outstanding choice for most pros, from what I've seen. Jerry Glaser had some input into their design, as I understand it, and uses them exclusively. Pretty expensive for the initial outlay, but they are gradable similar to the Tormek stone, and if used judiciously, will last a long time. Paired with a good solid grinder, it's the cat's meow.
