I'm far from an expert, and hopefully they will weigh in soon, and I've only turned a few endgrain bowls, but I'll offer what little advice I can. When turning, the tool should really move the opposite direction from a "regular" bowl orientation. That is, try to work the cut from the inside to the outside, not the other way around.
If you by chance have or can get a copy of the Del Stubbs turning video, he gives a really great example of endgrain turning, along with some mockup models and live demo. If you don't have it, your local library or turning club might and it is very much worth a look-see.
