It's hard to tell with these pics as to whether your self-criticism is valid. It may be that the form would be better if you flattened the top, but that may not be necessary in this one. If yuou want to, shoot a couple of pics head on (these look like they are from a higher elevation), and post them.

I noticed that you have made this comment (re flattening the top) on a couple of pieces. I find that there are certain things that I do also, which I wish I didn't, but my gouge almost seems to have a mind of its own. :-)

If you really want to see what the piece would look like with a flatter top and steeper mouth, turn it initially the way you usually do, but hollow out the inside to about 1/4 to 1/2", or even thicker. This will allow you the flexibility of looking at the piece when it is "done", and then decide whether you want to flatten the outside, or take out more meat from the inside. Does that make sense? I have had to do that for some forms which I have problems with---it takes longer to do, but I can usually et to where I want to.
