>I want to turn about 12 socket chisel handles with the grip portion being in an octagon shape. I would appreciate some advice as to how best to flatten each side so each side has the same length and width. Thanks

Tune up the band saw.
Tune the ripped octogone with a stationary belt sander.
You can the put between centers to cut end-tenons for the ferruls.

I'll rev up my brain when I get home. I used to know an easy way to set the rip fence to the exact setting to take the corners off a square piece and end up with 8 equal sides. Perhaps I'll remember when I stand at the saw.
I use a block plane or spoke shave mostly for short eight sided handles. It's faster than the table saw for onesies and twosies.

Here's the table saw way to cut octagon. Cut the wood sqare. Set the blade to 45 degrees. Tilt the wood to 45 degrees and set it against the blade. With the saw off of course. Move the fence up until it touches the corner of the wood. Now set the wood flat and cut off all 4 corners.
It gets more complicated if you want a tapered octagon. You have to build a taper jig. That's why I do most of mine with a hand plane or spokeshave.
