Natural Edge Turning Problem

>I am turning a natural edged bowl. I have it mounted with a screw in my Oneway chuck. I have turned a tenon on the base and am trying to turn a foot. My question is two-fold.
1) How do I turn a finished foot if I am to cut from small to large with a gouge as Raffan suggests. I have a hard time finishing the foot profile with the tenon in the way but as I understand I should not cut toward the foot from large diameter to small diameter.
Am I misunderstanding directions? Do I need to use different tools or just practice to improve my technique?
2) If I do finish the foot and try to grip it with the Oneway jaws I worry about marring the surface. I do not know how to grip the bowls uneven lip to be able to finish the base after the bowl interior is finished as with an even edged bowl.
