Sharpening knives
While finishing up the last of the slow closers for the kitchen drawers (they work perfectly!), I took this photo yesterday of the diamond disk I use for sharpening all the kitchen knives. This one is 600 grit, cost about $10 on eBay about 3 or so years ago. Should last many more. Super flat back and even grit.
A couple of quick swipes … more like sweeping the edge, creating a low 2mm secondary bevel. Each knife requires no more than 20 seconds for shaving sharp.
