I made the depth adjusting screw from some brass, threaded rod, and a portion of a knurled nut. A drill press was a big help, but a lot of it was just hacksaw and file work. A tap and die for threads is essential for making this kind of hardware. I don't know about finding cheese head screws, maybe MSC would carry them. I would probably make them by drilling and tapping a piece of brass rod for the head. Loctite or solder in some threaded rod and cut a slot with a hacksaw. A lot of work for a screw or two.
