Not necessary unless you have a shoulder vise, thought - the purpose of the bolt is to prevent the shoulder vise load from being carried by the corner dovetail, which would - in time - destroy the joint. If you are using it to keep your bench top lams together, you need better joinery, better glue, or both.
While a partial bolt (with nut recessed into the underside of the bench top 4"-6" in) is the traditional way of doing things, Klausz rightly notes that this practice will place the bench top in cross-grain tension beyond the nut, resulting in splits. Also keep in mind that a cross-grain bolt or all-thread only constrains expansion, so there is nothing other than a compressive load on the wood. You might have local fiber failure if you don't bother to spread the load with a washer, but unless you built your bench out of balsa, likely not an issue.
