raising panels by hand (part 2)

>thanks to previous advice, i got a stanley 45 off of ebay and eventually figured out how to plow consistent dados for the rails and stiles.
now my attention has turned to the actual panel itself which i tried to accomplish after being inspired by graham blackburn's video as well as the advice on the shavings.net web site with a stanley jack plane on a piece of poplar with and without a clamped(cramped?) batten.
the result: YUCK!
i tried planing it with the plane up against the fence after plowing a dado for the shoulder and just could not seem to get the right angle consistently. in frustration, i chucked the batten and tried to freehand it to a line that i had drawn on the other side of the now battered piece of wood with only slightly better albeit inconsistent results (the edge slopes downwards away from me).
how do you guys hand plane raised panels with a jack? would a carriage maker's plane (stanley 10) work better?
