Fixing dog holes.

>I'm working on a bench top and made dog holes, planning to use Lee Valley's bench dogs. I followed their instructions to cut the holes wide enough to fit the heads and then glue in "dog blocks" to fit the body of the dog. (Description below.)
I installed the blocks before gluing up the three sections (to be glued together later) but before taking the sections down to finished thickness. After doing that, there's not enough clearance to allow the dogs to slip below the surface of the top.
Now I need to figure out a way to remove about 1/32" or so from the top of the blocks so the dog will fit right. I want to be very careful to preserve the edges of the opening and am having a hard time figuring out how to make this work without just chiseling out the block and starting over. Any suggestions? "Dado the slots 11/16" wide, 11/16" deep. So that clamped workpieces are drawn down to the bench top, the slots are cut 2° off vertical, sloping toward the direction of the vise opening. Cut 11/16" by 1/4" dog blocks, long enough so that they are flush with the bottom of the skirt when they sit their required 1" below the top surface. Dry fit the dog blocks in place, and test the bench dogs for fit and movement. Glue the blocks in place, wiping away any excess adhesive. Now glue the outer skirt(s) to the bench tops."
