Bevel to use on a restored #5 plane

>I was recently given a hand plane which was my great grandfathers. It is a Baily Style plane #5. I can't tell much else about it other than there's a little 'U' in a circle, and it's made in the USA ('cuz it says so). It was probably purchased around the 1920's. The blade was in poor shape but I want to sharpen it up and see if it can return to use. Being relatively new to handplanes, I'm not certain what bevel to use. My general use would be in smoothing, like woods such as poplar and oak. I bought the Veritas sharpening jig (very nice, I'll have to try it with my chisels too) and they recommend anywhere from 25-25 deg. The bevel was rounded over and chipped, so I corrected it first to 25 deg, and i'm still lapping the back to remove the pitting (lot of work there!). But in doing a lot of reading, that might not be correct for smoothing. I also have the feeling that if this works nice, it may go on display (wouldn't want to break a nice old tool that's been in the family) and start getting myself some new planes.
