Hand Tool Performance? (Long)

>Since I don't regularly hang out in your shops I was curious regarding hand tool performance. Specifically, how accurate is your work or what are your personal tolerances?
I ask this partially because a lot is made of manufacturer tolerances for concavity, flatness, square sides etc... These tolerances definitely have an impact on performance and I do not want to deny that.
I am focussed on learning your personal tolerance for your projects with handtools?
A few examples:
Is a partial gap in a mortise and tenon joint of .009 acceptable?
When cutting a board to final length it is +.03 too long, is it good to go?
When jointing an edge of a stile it is 87.6 degrees not 90 degrees, is that good?
I appreciate any insight!

PS - I won't even ask about gaps in dovetails because I know after your third set they are perfect!
