Pear wood for cutting boards questions...

My neighbor had several Bradford pear trees taken down. I grabbed the logs, such as they were. They have been laying in my driveway for a years or two. I had the larger ones sawed into 4/4 boards. Today I took some of the left overs and cut them into cookies about 2" thick, thinking I would use them for making end grain cutting boards.
Now what to do with the cookies. They are still too wet and slightly spalted. Should I slice them down into cubes? What would you do?
