If the wood is kiln dried, I doubt as if you will get enough tannic acid diffusing into the wood to make a real difference.

I saw something several years ago about using iron to deliberately stain wood. I seem to remember steel wool and acid. I found the following web site:

Unless you want to be a purist, then you ought to make your own tannic acid. It's about time for acorns to fall, so go out to your family land and gather up an apron full, boil them and leave in the water over night. Your son will love the extra effort you went to rather than just opening a can of leftover stain. You know Barry if your really work at it, you drag this out a couple of more days! ;-)

tannic acid in the presence of iron (think steel wool) will make a dark stain.

Sleep in Heavenly Peace SHP - the bunk bed makers use vinegar and steel wool to stain the “white wood” bed frames that they make at bed builds.

The group that I work with has a large plastic open tank for the headboards and foot boards and a cut open PVC pipe section for the rails.

The stain darkens a bit over time. They don’t put any finish on the beds.
