Finish for Bar stools...what would you use?

Just about to finish the construction and sanding of the walnut bar stools I am building for a friend. These things are 32" tall, four legs about 2 x 2, rungs, and a foot rest. The seats are sculpted.
I wish I had had sense enough to finish them partially before assembly. I would have sprayed them with lacquer, my go to finish.
What would you do?

Bar stools can get a lot of wear. Years ago, when I refinished some vintage bar stools, I used tung oil. That way, when they did get worn or dinged, I just swabbed some tung oil on the spot and it looked great again.

Nothing less tough than pre-catalyzed lacquer. Conversion varnish would be my first choice, polyurethane my second, and pre-cat my third.
