I am building chests of drawers for my Granddaughters out of air dried cherry from the family farm. The sides have free floating panels about 16 by 34". Should I prefinish the panels before assembling the frames around them?

yes you should, when the panel moves the edges will look different if not prefinished

Amen to all the above, and the pieces are much easier to finish before assembly.

And keep a bit of the finish on hand in case any small touchups are needed after assembly.
