OT - Reducing noise from plumbing

>We're in the middle of a family room/kitchen remodel. We're trying to figure out a way of reducing the noise which comes from our upstairs plumbing, more specifically the upstairs drainlines. All of the drainlines are concentrated in one area just above the family room. We've considered doubling up on the drywall on the ceiling, but would rather not go that route because that would involve doubling up a very large area. How effective would it be if we were to cut the drywall to fit between the ceiling joist, thus encasing the drainline area? Maybe even fill the cavity first with insulation. Then hang the ceiling drywall as you normally would.
