It seems to me that the table and trestles would not be a propblem. The actual playing surface seems to be the interesting part. I see the following issues:

1. It needs to be slightly concave (side to side), I think a few thousands of an inch. I would think you would need accomplish this with either a router jig or by taking a couple thousands of an inch cut with a hand plane down the middle. You could then fair the curve out with a sander.

2. The board needs to be flat along its length. Would a 2 inch thick butcher block be flexible enough over a 10 foot length such that you could shim it flat (or flat enough)?

3. The top is coated with about a 1/4 inch thick coating of some type. Does anybody know what kind of top is used in the industry. It is so thick that it looks like an epoxy coating...but feels more like some type of thick poly.

4. A butcher block top 10 feet long would be difficult to glue up. Would using a base of mdf with hardwood flooring serve as a decent substitute?

I have built one.

>I ended up making a large torsion box the size of the base. on top of that there were wood stringers, and on top of the stingers was the laminated maple top. The finish was varathane both sides of the lamination. I did not bother the cupping in the center but it would more easily be accomplished by dishing the stringers and letting gravity pull the center down into them.
