I'm torn between choosing hawthorn wood with a few minor cracks and mulberry or walnut wood. I know that hawthorn is significantly harder and more flexible than the other two, and I can buy it for about half the price of walnut. If anyone has experience working with hawthorn wood—especially for chair making—I would really appreciate your advice.

Hawthorn has often been used for teeth/cogs in wood gears (think mills and such) because of it's hardness.  I don't think I'd want to use it in a chair because if it's tendency to develop cracks over time (makes for a squeaky chair).  White oak, walnut, maple, cherry, mulberry are better suited to handle the stresses a chair needs to take.
