The bag protects the microwave, and it gives you a positive indication that moisture is still coming out of the wood, because it will be damp.

You can still tell water is coming out even without the bag and I would suggest that you DO NOT use the kitchen microwave. I found an old one with a Carrousel to spin the work for $5. Heck, a new micro is only $30US. I now have two in the basement for use in drying.
Note that you CAN MELT a plastic bag arround your wood which slows the drying and is not fun to turn off.
Truthfully the only things hard about the microwave is getting the drying rate on some woods slow enough so they don't crack and knowing when to stop so the center doesn't scorch. But those answers are for a different question.
Bag it. Critters won't escape!

Now you've hit upon something. We could nuke our bowls with a plastic bag around them and they would be vacuum sealed. Why mess with all that yukky finish when you can just seal them in plastic.
