The term was historically, "bated breath," "bated" from the same root as the word "abate," meaning to reduce, diminish, or remove, as in "the weed abatement inspector." Thus, "bated breath" means you're holding your breath.

"Baited breath" means you're trying to catch something with your breath and always brings up, for me, images ranging from those men and women who spritz their mouths right before the first kiss to something on the other end of the continuum involving hunting dogs and five days with no showers.
