>I'd go so far as to suggest dumping a contractor who's using premix wet mud on anything but minor touch up or at most repairing a few seams. Hot mud is so much easier to use, doesn't shrink much, and speeds up the job considerably by not need hours to dry before re-coating. This is why I'm skeptical of pros using wet mud- who pays for that time? Even if they are juggling two or three jobs in the area, its pretty inefficient, and even if they don't literally bill you for waiting for the stuff to dry, the customer still tends to pay for a contractor's inefficiency.

Heat is also helpful, even with hot mud.

The only exception I see is that when we would redo our offices our contractors always seemed to use the all purpose stuff, and since those towers aren't designed for anything other than 72 degrees I guess it works for them. But in a residence the D90, or whatever, is the next best thing to plaster.
