Tuning chisels

I get the chopping cut, because I mainly use my chisels for cleaning up test dovetails ( I still stink at them ).
They descibe a long handled chisel as being used for a paring cut. Can someone describe this cut and when and where it might be applied?
As always your help oh great wise ones (no pun intended, and I didn't use the old adjective), is always appreciated.
