I may have it backwards, but my understanding has always been that when a board has some twist, it is considered to be "in wind." Hence, one is checking for the presence of wind (twist) with winding sticks (winking strips). When flat, it is "out of wind." Maybe I'm wrong, or the usage is different "down under"?
The key to having winding sticks which are worth keeping is to carefully select the material. I have a pair, made of straight-grained, quarter-sawn American black walnut, which I have been using for, at least, twenty years. I've had to "correct" them, at most, a couple of times over all those years. I just now checked them on a known flat surface (a j**nt*r bed), and they're quite accurate - and they've been moved several hundred miles and been in a number of different environments over the past few months. And I hadn't tested them for quite some time.
Straight-grained, quarter-sawn mahogany might be an even better choice. It is also customary to increase contrast by inlaying a lighter colored wood (assuming the use of darker wood for the main body) along the top of the corner of the winding stick which is placed at the far end. I simplified that by inlaying short pieces of contrasting wood near the ends - seems to work just as well, and was quick to do. To me, it was well worth the small investment of time, to always have a serviceable pair of winding sticks at hand.
Making/correcting them is really pretty easy. Shoot the edges of the sticks, which are to rest on the material, straight with a plane of the appropriate length. Then place the two pieces together (about the only time this makes sense) to shoot the other edges - making sure the trued edges are perfectly in line with each other. It is best to keep the second edges close to parallel with the first trued edges, but the really important thing is that the second edges are parallel with each other. If always used in the same orientation with each other, that is perfectly serviceable. Chamfering the non-critical arrises of the ends and top edges will help to easily identify the proper orientation.
One could purchase metal straight edges for this, I suppose, but I like the idea of relying on my own knowledge and skills for some things. Besides, if you happen to slip and drop a wooden winding stick on your material, it will likely do less damage. Same goes for wooden straight edges, which are easily made and checked for accuracy.
