fitting sliding dovetails in a case?

>When touring Winterthur I observed that the cases assembled with sliding dovetails typically still had tight joints at the rails but the ones with M&T often had bowed out and opened this joint. Therefore, I became interested in this assembly. but how to fit them?
The aquisition of a shoulder plane has solved my M&T fitting problems. I just oversize the tennons and shave them to fit the vaguries of my mortises. But I don't know of a tool that will shave the male part of a sliding dovetail joint, analogous to the shoulder plane, or the female part either. So what is done?
