Dressing a wheel

>Tonight I put my new Norton grinding wheel on the grinder, and used my new diamond dressing tool on it. Just wondering, how do you tell when the wheel is properly dressed? I used the probably-incorrect-and-dangerous method of touching my thumb lightly to the spinning wheel to see if it felt flat; I couldn't think of any other way to know.
Also I took a practice spin at grinding a bevel, regrinding the one that I had messed up last week. Still not quite there yet -- I figured out after about 5 minutes that the tool rest that came with the grinder does not sit parallel to the face of the wheel, is why the bevel comes out so dramatically out of true. So, looks like I will go by Joel's shop this week and buy that LV tool rest -- it is not too expensive and I'd like to move ahead.
