Sharpening question

>I'm running fast on the slippery slope with my recent shoulder plane purchase. Now I'm turning my attention to sharpening. Currently I'm using scary sharp and seem to be getting decent results. But after reading the Charlesworth article in FWW and some books on sharpening, I'm beginning to think that maybe waterstones would be a better choice.
Any thoughts on the advantages/disadvantages of scary sharp and waterstones?
If I were to go the waterstone route, I was planning on getting a 1000, 4000, and possibly an 8000 grit. Any advice for what you really need to get started?
