These planes (hollows and rounds) are named for the actual shape of thier soles and not the shape they cut into the work. For example a round has a convex or round shaped sole leaving a hollow shape on the work. A hollow has a concave shaped sole and creates a round shape on the work. I credit this knowledge to Jim Kingshott (The Master) and his video of specialty planes. Mind you, I've never used either and absolutely envy your skill with these planes as well as your carving ability. I'm not correcting you to critisize, I just thought I'd throw out this bit of info (trivial as it might be) just for the heck of it. Just to echo the other messages, great work, something to be completely proud of.

Any benefit in doing it either way?

I don't think it would make much of a difference. The glue on the cheeks of the tenon against the face of the mortise is what does most of the holding. Historically, the glues available to many weren't always so good and the wedges added a physical aspect to the joinery - now, I believe, they are more for aesthetic reasons and ease of assembly.
