What wood for infill

>So after much researching, reading, asking a bunch of questions, I've decided I'm going to bite the bullet and try my hand at making a #51 smoother. I've got a broze rough casting of the frame and the lever cap. My machine shop class will resume on thursday, so I'm trying to read up some more and just thinking positive thoughts. In any case, I was rummaging through my stash of wood (all the while thinking about what wood I'm going to use for the infill). I know I'm a ways away from that stage, but I can't help but get excited with how it's going to look. I've only got one small board of cocobolo (approx. 3/4 x 4" 30"). I guess I could try to laminate it to get the proper thickness, but I've also got other dense woods like jatoba (in 12/4 dimensions) as well as some domestic stuff like cherry, walnut, etc.
What would you guys suggest? Stick with cocobolo for the traditional look--laminating would be the only option for me right now (don't want to buy anymore stock) or jatoba or something else?

On a side note, I've noticed that the frames of these infill planes are either dovetailed together or milled out of castings. I was wondering why people haven't tried to weld the sides to the sole of a plane. I know the heat generated would probably result in some warping of the metal, but I'm thinking couldn't that be fixed by a milling machine the same way a frame is milled from a rough casting. Just a thought.
