>WB poly will also off-gas for less time, and smell a lot better quicker. It does take longer to cross link, up to a month IIRC, but should be pretty good after a week or so.
If you use a water clear WB poly, you might consider a dewaxed shellac underneath to give it a little amber glow - some WB product is almost blue and can give a less than appreciated look - at least by some.

have Fuhr products, you might consider the 255 or 375 WB varnishes - dry really quick for recoat etc, either water-clear or slightly amber etc. Very nice stuff.
