Bench coatings/finishes...options

Just finished a bench in the last day or two - well, mostly...
It's construction grade 2X4's and 4X4 for the frame/support, and triple layer MDF laminated top, with hardboard to top it off. (Talk about dog holes - I drilled them for hours, and I'm still not all done!)
While it's no beauty, I'd like to protect it.
My first thought was spraying a couple of coats of shellac on it. But I worried about shellac coming off on joints/surfaces that then wouldn't accept glue/stain...but perhaps I'm too worried about things...
Then, I thought of poly.
Oil(s), doesn't appeal to me much. Unless there's some super big reason to avoid poly and/or shellac, I would prefer to avoid them.
Any thoughts?
