What is your favorite finish for white kitchen cabinets? Building maple cabinets and would like to keep a little transparency so grain will show slightly.

My favorite white finish is tinted conversion varnish. But your second statement would require a dye or stain, followed by a water white finish of some sort. Probably water based.

If you can apply by spraying, look into General Finish's Enduro White Poly satin gloss. I prefer a sealer of dewaxed shellac on first. As maple is closed pore, I wouldn't expect much in the way of physical grain to show unless you thin the product probably more than recommended. You might have to recoat with a clear for durability.
A second option is to use a thin white wash coat that is rubbed back to show some wood (like a "pickle coat") and then top coat with a full strength water-white clear such as the waterbornes like Enduro Clear or Target's stuff.

target white acrylic (I think they call it a lacquer, but it's water based) with a crosslink.
Not sure that it'll allow much to show through, though.

To put it succinctly, if you want the grain to show, don's start with maple.
