Wiping Varnish&Waterlox?

In a previous post I was asking about a finish for my curly maple table top. I contacted Homestead Finishing and Jeff is not carrying finishes because of the Amazon factor. He mentioned Waterlox as a idea for a wiping varnish if I decide on this route.
Would appreciate some input.

It wears really well (its my go-to for beer taster trays and has held up for ~years~ with relatively thin coats in what is a very harsh/wet environment).
Wipes on nicely enough as long as you do thin coats. Some people thin it, that does help for the first coat
I'd hesitate to use it for maple because it has a significant yellow tint, but that does depend on what you want and the maple (maple will yellow anyway so..).

I've used my share of Waterlox through the years. It's a great finish and wipes on well. However, there's two things about it that's caused me to switch. First, it seems the odor lingers long after application. Second, it's gotten quite pricey.
I switched over to General Finishes Arm R Seal. The odor dissipates faster, it's more affordable, easy to wipe on, and I don't think it adds as much of an amber color than the Waterlox.

Consider Varathane water borne poly floor finish. Easy and bullet proof. Great for times the table is danced on.

After looking more closely at this product I think it might have too much amber.
It's been water white in my use
