Care for coffee?

I bought some ash and within the lot were some boards that looked a bit different. The top plank in PIC 1 is ash. The three below are what I believe is Coffee Tree.
While the grain and color are not too dissimilar from ash note the thin sapwood in Picture 2 (ash above and coffee tree below). Ash can have a pink hue. But, ash never has sapwood only 3/4" thick.
