What do olives, oysters, and sausage have to do with this master's work?

I originally discovered this clock at the Met in New York (on the web) and decided to make one. The wood is sawn olive veneer (from Paris), which is flat cut, oyster cut, and sausage cut (on the sides). 

The marquetry includes leaves made from green tinted bone. The face is gilt, silvered and engraved, the hands are hand cut, and the works are traditional, made by Hartwig's Clock Co., in Gravity, PA. The face was made in London. I have already sold this to a collector in Texas, but I am now making two more. Hopefully, I will be able to keep one!
