Probably that 0.001" runout is more important to a hobbyist than a pro. The pro shop probably has a jointer, or several and its pretty easy to just use the table saw as a rough cutting machine and joint off the edge to a nice finish. I used to do it that way routinely when I worked in a shop like that. Hobbyists might not have the jointer, or they might not know how easy all this is to do with a hand plane.
