I think they were done as I'm doing now, which is to harden and temper a straight blank and then low temp grind to eliminate warping, flatten, and grind bevels.

Peters offers straightening at no cost. Not sure what they do. I'd bet 3v is well behaved and doesn't need much. Files can be downright horrible.

You can do limited flattening after temper by peining. There are other strategies with air hardening steel to limit warping, such as plate sandwich with aluminum plates and pressure, and then forced air around the sandwich.

I harden in oil and then water to finish, and then toss in the freezer. I can do well, but I know it's possible with repetition to figure out how to get less retained austenite.
