Winston, this is the raison d'ĂȘtre for the Ruler Trick. Another alternative is a leather strop, since there is a minute amount of give.

I am trying to think why I do not have a problem with flat backs (there is an even polish across the back). I use either a flattened Sigma 13000 or an UF Spyderco followed by green compound on hardwood. The Sigmas get flattened frequently, while the Spyderco are checked a few times each year. I do lap the blades on the polishing stone after a wire is created, and this maintains the flat back.
