I think those who use the terms "open" and "close" to describe the flute are borrowing the terms as they are used in sports. In baseball (or golf), a hitter has a closed stance if the lead foot (and/or shoulder) is positioned such that the hitter's back is towards the pitcher. The stance is open if the pitcher can see your chest.
