I wonder how you'd make out rough turning a bowl maybe 19" diam., and leaving it ~2" thick, and spalting that rough-out. That seems a better bet than getting the fungus to fully invade a large blank without leaving 2" of punky compost around the edges(?)
I've been lucky enough to play with some Am. Elm and some Grey Birch that was spalted right to the core (~15" diameter), but not soft and punky -- pretty fine line between really pretty, and pretty rotten for both species. Maybe my luck was the high humidity tempered with our colder climate?
