When you start moving the vari-grind leg, you will need to keep slighly adjusting the vee block position to maintain the nose angle. It does take some playing, but you will get it to match. It is always a good thing to match how much of the tool is sticking out past the vari-grind jig. I have seen 2" used alot, but have seen some people use 1.75" as well. You could have Mark just trace the outline of the tool and the vari-grind and send it to you.
