Sorry, no experience with HSS steel.
We did experiment with 52100 ball bearing steel which is a rather conventional steel with very nice properties.

The problem with many modern steel types is that they are almost useless for laminated blades because they don’t ‘stick’ to the backing material. You might make this work with some heavy equipment, but no chance with manual hammering.
